Summer Recess Recipes

The official start of summer is the time to hang out and visit with friends. Socializing, parties and being with friends was part of the inspiration for the name ‘Recess 4 Grownups’, and each year at this time I share some easy summer recipes for gathering together. I’m always looking for ways to spend more time socializing and less time cooking.

Memorial Day is the beginning of ‘Summer Recess’, and this year even more so. Recess means ‘temporary withdrawal or cessation from the usual work or activity’ – and how cool that we are now moving to the cessation of mask-wearing and limited activities.

I share my Lemon Crème Cocktail, a delicious concoction of my own creation. So perfect for mixing at home and taking to the pool. The BBQ chicken is 5 minutes of preparation time resulting in a very yummy meal for easy entertaining.

Serves: 4-6

Ingredients:

  • 2 lbs boneless, skinless chicken breasts

Original Sauce:

    • 1 cup BBQ sauce
    • ¼ cup Italian dressing
    • ¼ cup brown sugar
    • 1 tbsp Worcestershire sauce
    • salt to taste

Weight Watchers Version (only 3 points for the entire recipe!):

  • 1 cup G Hughes Smokehouse Hickory (or Traditional or Honey) Flavored Sugar Free BBQ Sauce
  • 1 tbsp Worcestershire sauce
  • salt to taste

Instructions:

1. Season chicken breast lightly with some sea salt and place in your crockpot.
2. In a mixing bowl combine sauce ingredients. Stir until well combined.
3. Pour over chicken, cover and cook on HIGH for 3-4 hours
4. Once time is up, you can serve the breast whole, or shred with 2 forks. If shredding, recover and let cook in sauce for about 10-15 more minutes to soak up all that delicious flavor.
5. Serve on buns, over rice, in wraps, on a salad or eat a plateful as is! Easy summer way is on fresh rolls, topped with coleslaw.

Lemon Crème Cocktail

1 or 2 servings depending…

• 8 oz lemonade (Chick-fil-a lemonade is the best!)
• 2 oz whipped crème vodka

Mix together. Shake with ice, and serve in a martini glass, or just over ice in a fun glass. Awesome.
