Summer Recess (Pimento Cheese Pepper Jelly Cups)
Going to neighborhood gatherings or to pool parties with family and friends tends to be the activity of the long holiday weekend that welcomes summer. I’m all about find yummy appetizers that are easy to make so that the fun can start that much sooner.
We enjoyed a great appetizer this past weekend and I wanted to share, as it is a perfect recipe to prepare for this weekend’s activities.
Pimento Cheese Pepper Jelly Cups
= 2 package mini-phyllo shells (such as Athens brand with 15 in a package)
= 1 1/2 cup pimento cheese (I recommend Palmetto Cheese)
= 1/2 cup pepper jelly
- Preheat oven to 350 degrees.
- Remove shells from freezer and fill with pimento cheese.
- Bake for 10 minutes and remove from oven.
- Top with a little dollop of pepper jelly.
- Serve warm or at room temperature.
