Last Recess of Summer (Garlic Feta Cheese Pate)
With this coming Labor Day weekend the holiday that tends to close out the summer season, I share an easy recipe to take to a gathering with friends and family…
To Die For Garlic Feta Cheese Pate
Approximately 2 cups
INGREDIENTS
2 cloves garlic, minced
4 anchovy fillets, chopped (or use anchovy paste)
6 tablespoons butter, softened
1 (8 ounce) package cream cheese, softened
3/4 cup crumbled feta cheese
1/4 cup sour cream
1 tablespoon chopped fresh chives
1 dash hot pepper sauce (e.g. Tabasco™), or to taste
freshly ground black pepper to taste
DIRECTIONS
1. Combine the garlic, anchovies, butter, cream cheese, feta cheese, sour cream, chives, hot pepper sauce and pepper in the container of a food processor. Process until smooth. Transfer to a serving bowl, and serve with crackers, bread slices, or pita chips.
If you freeze it:
Defrost in refrigerator ~4 hours prior to serving; after about an hour, place on serving plate, and return to fridge.
2. Garnish with chives.
