What is a Michelin Star?
Michelin Stars — you’ve probably heard the term, but what do they truly signify in the world of gastronomy? With a sea of restaurants each claiming to offer the best experience, it takes a trusted standard to distinguish the truly exceptional. The Michelin Star system does just that, recognizing restaurants worldwide for their outstanding culinary achievements. These stars are a mark of unparalleled quality and creativity. The more stars bestowed upon a restaurant, the higher its reputation for delivering extraordinary dining experiences.
I have developed a fascination with Michelin starred restaurants after an incredible experience I had in Amsterdam in March. The hotel I stayed at houses a Michelin starred restaurant, so I thought I would treat myself to a special dining experience while there.
Bougainville Restaurant features a tasting menu, with an optional wine paring, and it was truly spectacular. With each course, they would come and explain it in detail; when they poured the wine though, they wouldn’t tell me anything about it because they wanted me to just to discover the flavors, and they didn’t want to give me a preconceived notion. Then they would share the wine details at the end of the course. It was an extraordinary evening.
What are the criteria used to award Michelin Stars?
In order for a restaurant to obtain one or more Michelin Stars, they will go through a very rigorous evaluation process. The criteria focus on the technique mastery, the harmony of flavors, the ingredients used, the unique character and creativity the chef brings to the dishes, and the consistency in delivering excellence throughout the menu over time.
When a restaurant receives a Michelin Star, that means they deliver consistent quality.
That being said, the restaurant style or decor doesn’t affect the star rating, and neither does service. Michelin stars are awarded based purely on culinary quality. Contrary to popular belief, achieving the coveted stars doesn’t necessarily require luxurious surroundings. In Singapore and Bangkok, there are street food vendors that have earned Michelin stars. These places often lack formal service, and diners might find themselves eating off plastic tables and chairs, if there are any.There are restaurants in the United States and Europe that are very casual with a laid-back service style.
While elements such as silver service, formal attire, and white tablecloths are typically associated with fine dining, they are not essential criteria for receiving a Michelin star.
Where did the Michelin Star system come from?
Michelin Stars are bestowed by the Michelin Guide, which is published by the renowned French tire company Michelin. The origins of the guide trace back to 1900 when brothers André and Édouard Michelin introduced it to encourage more people to drive and, consequently, increase the demand for their tires. The guide initially aimed to provide practical travel information, such as where to find good food and lodging, to motorists on the road.
Over time, the Michelin Guide transitioned from offering basic travel tips to becoming one of the world’s most authoritative references on fine dining. The star rating system made its debut in 1926 with a single star. By 1931, the guide expanded this system to up to three stars, setting a new standard for culinary excellence.
Initially centered on France, the Michelin Guide has since broadened its scope to include a multitude of countries across Europe, Asia, North America, and beyond. Michelin inspectors, who remain anonymous to ensure fairness and objectivity, visit restaurants to conduct their assessments. Their rigorous standards contribute to the guide’s esteemed reputation.
How are the restaurants evaluated?
These Michelin Stars are determined by anonymous Michelin inspectors. They are full time employees for the organization, and they are all former restaurant/hospitality professionals. They are vetted in the art of cooking, and they will assess every restaurant anonymously based on the five key criteria.
However, it’s important to note that multiple inspectors will go to the restaurant individually. After that, they discuss their experiences as a team, and then they will take the final decision.
In general, they will visit the restaurant and try as many meals as necessary so they can have the complete picture.
They want to ensure that the restaurant delivers a consistent experience over time, and that the quality is delivered across a variety of the offerings on the menu. The anonymity aspect is important, because they don’t want to have any special accommodation. Instead, the focus is to experience the restaurant just like a regular customer.
Another interesting aspect about the Michelin Star awarding process is that the inspectors will go throughout different seasons as well. They will also experience dinner, lunch, but they will go during the weekdays and weekends as well. Getting a good idea of the exact experience that a normal customer receives is crucial, and it certainly offers more credit to the number of Michelin Stars received by the restaurant.
How many stars can be awarded?
The Michelin Star system includes 1, 2 or 3 stars, with 3 being the highest. If a restaurant gets 1 Michelin Star, then it’s seen as a very good one in its category, with high standards and a great menu. 2 Michelin Stars show that the restaurant offers excellent cuisine, and it delivers exceptional food and experiences.
When a restaurant has 3 Michelin Stars, that means they feature exceptional cuisine, and it’s considered to be worth a special journey to visit. It’s considered a destination in its all right – that’s what makes it such a unique and different restaurant in the first place.
Beyond the Michelin Star system, Michelin has an additional rating system. The Bib Gourmand designation is a notable accolade awarded by the Michelin Guide that highlights restaurants offering exceptional food at moderate prices. Named after “Bibendum,” the Michelin Man mascot, this award serves as a counterpart to the prestigious Michelin Stars by recognizing establishments that provide great value for money.
